Few weeks back we had a potluck at work and I made Tiff’s chicken chili, I have a delish, healthy recipe that I thought I would share. The recipe below makes 4 servings I tripled it to feed the crowd.
The things you’ll need
crock pot
1lb. chicken
1 can of fire roasted tomatoes
1 can of kidney beans
2 tablespoons of green chilies
1/2 cup of diced onions
3 cloves of garlic, pressed
3/4 cup of cilantro, save 1/2 cup to top
1 bag of cheese
2 teaspoons of ground cumin
salt & pepper to taste
sour cream to top
mix it all together in a crock pot and let it cook 4-6 hours
serve & enjoy!
