Oh Man, once you try this easy delicious chicken salad it is hard to have any other!  If you like chicken salad, I’m sure you already have a favorite..…this might be your new favorite (just sayin’)! It is so simple and tasty, not to mention made in just a few minutes with ONLY FIVE  ingredients.

It’s the perfect addition to your meal plan or for a working mom on the go!

This recipe was created when I was forced to increase my protein intake while pregnant.  You see, I was one of the “chosen ones” to be diagnosed with gestational diabetes while pregnant. I plan on sharing my trials and tribulations as well as the numerous positive outcomes of dealing gestational diabetes in an upcoming post….I took it very seriously!

For now I’ll  tell you that my first thought when I heard the news was well, what can I eat?

I am pregnant and I am hungry…..now!!

This easy delicious chicken salad gave me the protein I needed for a balanced diet and is so versatile!

I still eat and serve this chicken salad in so many ways; for breakfast on an English muffin, lunch on rye, on a green salad and sometimes for a quick snack…a few spoonful’s with crackers.

 Mix together the following:

  • 2 Cans Canned Chicken (Drained & Rinsed)

  • 5 Celery Stalks (Diced)

  • ½ Sweet Onion (Diced)

  • 1/3  Cup Mayo

  • 2 Tbls Trader Joes 21 Seasoning Salute (no salt added)

  • Salt to taste (not necessary)
