I didn’t realize I had a lasagna obsession until I was searching my blog for the word “lasagna” and saw that this makes post number 3.  I’ve made a lasagna, lasagna cupcakes and now lasagna soup.  Something about noodles, garlic, sauce and ricotta that I can’t get enough of 😉  I think I keep trying to reinvent lasagna because I love all the ingredients just not in heavy layers, I like it all mixed up and lasagna soup was the best compromise…to date.  **please note – I will still eat it in layers any day**

I pinned this lasagna soup recipe on my pinterest board, “Food that makes me go yum!”  I changed it up a bit to be more my style and it was another delish lasagna meal.

Here is everything that went into it. 

salt and pepper
3 tsp of cumin
1 pound of 96/4 ground meat
2 cans of diced tomatoes
little bit of chopped onion {it’s not Davey’s favorite}
4-5 cloves of garlic {this is Davey’s favorite}
6 cups of chicken broth
mix it all in the crock pot
1/4 box of noodles – add after 2 hours
1 tbsp of ricotta and 1/4 cup if cheese per serving – added last

Almost everything from Trader Joe’s


I let this cook for 4 hours and in the last 2 I added the noodles right on in there…uncooked

Add ricotta and cheese into the bowl and pour the soup over it…who ever came up with this deserves a serious high-five!
