This Easter we were in charge of the deviled eggs.  Well, you know me… I can’t just make plain old already-been-seen deviled eggs.  NOPE, I wanted to do something different. Put my Heather-spin on it.  So, I did!!

Have you ever seen colored deviled eggs before?  NO?  me either!  But they’re really very simple!

First, you hard boil the eggs.

Then, you cut them lengthwise and empty the yolks into a bowl.

Next, prep a dye bath.  This is just food coloring and water.  I also added a splash of vinegar because I read it makes the color stick to the egg whites better.  I’m not sure if it’s really needed but you can’t taste it, so no harm, no foul.

Then, place all your egg whites into the pretty colored water.  The longer you let them soak, the darker the colors will be.  I wanted pretty pastels for Easter.  It took mine about 15-20 minutes.

When your eggs are the perfect shade, remove them from the water and allow them to dry.

While they are drying, make your deviled egg filling.  Follow your grandma’s recipe or click here for one.

You can spoon the filling into each egg, which always sounds easy, until I’m up to my elbows in yolk… OR you can be a little fancier and less messy and use a Ziplock bag to ‘pipe’ into your eggs.  You just put the filling in, remove all the air, and push everything to one corner of the bag.

Snip the tip and carefully pipe into each egg. I’m sure yours will look a lot nicer than this….

We were in a hurry, so mine definitely aren’t piped as pretty as they could have been.  However, this is MUCH neater than if I had tried to spoon in the filling.  I’m not sure why but that spooning method just isn’t for me!

Place the eggs on your favorite serving dish and get ready for your guests to be impressed.  When they ask,  tell them you have been raising colored chickens!  😉
